Healthy, golden, and delicious – perfect for the whole family! These zucchini waffles are cooked in a waffle maker without oil. Similar to fritters, but healthier thanks to rice flour and natural yogurt. Great on their own for breakfast, dinner, or a quick snack.

Step 1
Use any type of zucchini – young or mature – medium size is best. Choose natural yogurt with no additives. You can substitute with low-fat sour cream or kefir (you’ll need less kefir). Use rice, corn, oat, or whole wheat flour.
Step 2
Wash and pat dry the zucchini. Peel the skin off if it’s mature; leave it if it’s young. Same goes for seeds – remove them only if they’re large. Grate the zucchini using a large-hole grater. Sprinkle with salt, mix, and let sit for 8–10 minutes. Then squeeze out the liquid.

Crack an egg into the bowl with grated zucchini, add yogurt and a bit more salt. Add any spices you like.
Step 4
Mix until the mixture is smooth and uniform.
Step 5
Begin adding flour in portions, mixing well after each addition. The amount of flour may vary – aim for a batter consistency similar to thick sour cream.

Preheat your waffle maker. Lightly grease the plates with a small amount of oil using a brush – just once before the first waffle. Add batter with a spoon (about 2 tablespoons per waffle).
Step 7
Close the lid and cook until golden brown. Baking time depends on your waffle maker’s power. Remove the cooked waffle and continue with the rest of the batter. The waffles will be slightly firm when hot but soften as they cool.

Serve warm. Enjoy!
