Step 1
Choose a young zucchini – no need to peel or remove seeds. Use any cream; I used heavy cream (about 33% fat).
Step 2
Wash the zucchini well under running water. Cut off both ends and dice it into small cubes. Place it in a pot.

Peel and chop the potatoes into chunks. Add them to the pot with the zucchini.
Step 4
Peel the onion and carrot. Chop them — size doesn't matter since everything will be puréed.
Step 5
In a hot skillet, add a little vegetable oil and sauté the onion and carrot for 2–3 minutes until slightly golden.

Add the sautéed vegetables to the pot with the zucchini and potatoes.
Step 7
Pour in enough water and cream to almost cover the vegetables. Bring to a boil, then simmer for about 15 minutes. Add salt and herbs to taste.
Step 8
Once the vegetables are soft, pour out about half the liquid. Mash everything using a potato masher. Add butter and pressed garlic. Gradually add back some of the liquid to reach the desired consistency.

Your zucchini purée is ready! For a smoother texture, blend it using an immersion or countertop blender.
Step 10
Garnish with fresh herbs like dill or parsley and serve. It makes a perfect side dish for many meals. Enjoy!
