Step 1
Prepare the necessary ingredients. I used regular zucchini with pale green skin. Young zucchini will also work well. Choose juicy and flavorful carrots. Use either sunflower or olive oil, depending on your preference for frying.

Wash the zucchini thoroughly, as they will be used with the skin on, and dry them. Trim both ends and cut in half. Use a vegetable peeler to slice the zucchini into thin strips. If using a knife, cut them as thinly as possible. For best results, choose young zucchini with tender skin. If using more mature zucchini, remove the tough skin and scoop out the center with seeds.

Wash, peel, and grate the carrot using a julienne grater. If you don’t have one, cut the carrot into thin strips with a knife or use a regular coarse grater.

Wash the parsley, shake off excess moisture, and finely chop it. You can replace or complement it with other greens such as dill, green onions, cilantro, or a mix of different herbs.

Peel and finely chop the garlic with a knife or press it through a garlic press.

Heat vegetable oil in a frying pan over low heat. Add the zucchini noodles and sauté for about 2 minutes. During this time, the zucchini will release some juice and soften slightly.

Add the grated carrot to the pan. Stir everything carefully, trying not to break the zucchini noodles. Sauté together for 1–2 minutes.

Finally, sprinkle the dish with chopped garlic and parsley, then season with salt and pepper. Stir everything together. If needed, cook for a little longer until the zucchini reaches your desired softness. The cooking time is approximate and depends on your stove and personal preference.
