Cloves

0.5 teaspoon

0.25 cup

Red wine

1 cup

Apple juice

25 milliliters

Red wine vinegar

50 grams

Step 1
Cut the wild boar meat into small pieces for better marinating and roasting.
Step 2
Combine all dry spices in a jar and mix. The amount is more than needed for this recipe, but you’ll have a great spice blend for future use.

For the marinade, mix wine, apple juice, and vinegar in a bowl.

Add 1 teaspoon of the spice blend and stir well.

Place the meat in a container, pour the marinade over it, cover, and refrigerate.

Marinate the meat from 1 to 12 hours. About 30 minutes before the end of marinating, preheat your oven to 350°F (175°C).

Strain the marinade into a separate container—do not discard it.

Place the wild boar meat on a foil-lined baking sheet and rub with salt.

Sprinkle the meat with the spice blend and press cloves into the pieces. Roast in the preheated oven at 350°F (175°C) for 15 minutes.

Take the meat out and check the doneness. If it’s not enough for your taste, return it to the oven for another 10–15 minutes. The exact time depends on your oven. Note that wild boar meat stays slightly pink inside.

Remove the cooked meat from the oven and set aside in a warm place to keep it from cooling. Pour the pan juices into the marinade.

Place the marinade on the stove and bring it to a boil. Simmer for 10 minutes to form the sauce.

Slice the meat, removing the cloves, and arrange for serving.

Drizzle the sauce over the meat.
