Step 1
Use refined vegetable oil, meaning one without a strong odor.
Step 2
You can make the cutlets from any minced meat: beef, chicken, or fish. Prepare the cutlet mixture in the usual way, adding finely chopped onions, white bread soaked in milk, salt, and spices. I used a mix of pork and beef mince.

Shape the cutlet mixture into the desired size and shape. Heat vegetable oil in a pan. Fry the cutlets over medium heat until golden brown on both sides. Remove the cutlets from the pan.

Peel and wash the onion, then chop it into small cubes.

You can use the leftover oil and juices from frying the cutlets to make the sauce. Place the chopped onion in the pan. Fry the onion over medium heat, stirring, until translucent and soft.

Add the tomato paste to the pan and stir. Let the tomato paste simmer with the onion for 1 minute.

Dissolve the flour in a small amount of water until the lumps disappear. Alternatively, you can fry the flour with the onion and then add water. However, this method might make it harder to get rid of the lumps.

Pour the dissolved flour into the pan, stir well. Add the remaining water and increase the heat. The amount of water will depend on the desired thickness of the sauce. For a thicker sauce, reduce the water.

Season the sauce with salt, add bay leaves, aromatic herbs, and spices to taste, and stir.

Add the cutlets to the sauce and bring it to a boil. Simmer the cutlets in the sauce, covered, for 7-10 minutes to let them absorb the flavor and aroma. I made the sauce medium-thick.

Serve the tomato sauce with cutlets with a side of potatoes, grains, or pasta. Enjoy your meal!
