Tiramisu with Cherries (Egg-Free)

Light, delicate, melts in your mouth, and not overly sweet! Tiramisu with cherries (egg-free) is the perfect dessert for a festive table. It’s very easy and quick to make, resulting in an incredibly delicious and airy treat. Served in individual dessert cups for convenience and elegance.

Step 1
Prepare the ingredients listed in the recipe. Use heavy cream with at least 33% fat. If using frozen pitted cherries, thaw them in a strainer beforehand. You can also use canned cherries, but drain them well before use.
Step 2
Pour the cold cream into a pre-chilled bowl. Beat with a mixer until soft peaks form, gradually adding powdered sugar.

Gradually add mascarpone to the whipped cream, gently mixing with a silicone spatula in one direction from top to bottom until smooth. If desired, add a tablespoon of liqueur, but this is optional.
Step 4
Brew coffee in advance. Once cooled, add a couple of teaspoons of cognac or coffee liqueur. I didn’t add sugar, but you can adjust to taste.
Step 5
Assemble the dessert: Prepare serving glasses. Add about a tablespoon of the mascarpone cream mixture to the bottom.

Step 6
Dip one side of the ladyfingers into the coffee-cognac mixture. Break them in half and place the dry side on top of the cream.
Step 7
Spread 2-3 teaspoons of cherries over the ladyfingers.
Step 8
Add another layer of mascarpone cream and spread evenly.

Add a smaller amount of cherries for the next layer.
Step 10
Finish with a final layer of mascarpone cream.
Step 11
Decorate the tiramisu as desired. I grated chocolate on top (you can also chop it with a knife), added pomegranate seeds, and a fresh mint leaf. Alternatively, dust with cocoa powder using a fine sieve or garnish with fresh or cocktail cherries. Refrigerate for a few hours before serving (preferably overnight) to allow the flavors to blend.
