Step 1
Prepare all the necessary ingredients. You can use milk of any fat content, but pancakes will definitely taste better with higher-fat milk. I recommend using first or even second-grade flour rather than the highest grade. It's best to choose large eggs. Milk and eggs should be at room temperature, so take them out of the fridge in advance. Cow’s milk can be replaced with a plant-based alternative.

Crack the eggs into a mixing bowl for the pancake batter.

Whisk the eggs with sugar until smooth. You can use a mixer with a whisk attachment or mix by hand. If desired, especially when cooking for children, you can add flavorings. A pinch of vanilla or cinnamon, or a teaspoon of vanilla sugar, would be a great addition.

Pour room-temperature milk into the egg mixture.

Stir the mixture with a whisk until smooth.

Melt the butter in a microwave or using a water bath, then gradually add it to the egg-milk mixture, stirring continuously to prevent the egg whites from curdling.

Add sifted flour, baking powder, and salt. Sifting the flour is always important in baking, as it aerates the flour, making the final product softer.

Do not add all the flour at once. Different types of flour have varying gluten content, so adjust the batter thickness accordingly.

Mix everything thoroughly to avoid lumps. The batter should be quite thick, similar to heavy sour cream.

For frying pancakes, I recommend using a cast iron or ceramic pan. Lightly grease the pan with vegetable oil using a brush or half an onion. Heat the pan well.

Pour a little batter onto the pan and spread it into a large circle. Fry the pancakes for 1-2 minutes on each side.
