Step 1
Prepare the necessary ingredients. Stir the tahini well before using, as it may separate into oil and solids. You can use store-bought tahini or make your own.

Peel the garlic and press it twice through a garlic press. If you prefer a milder taste, you can skip the garlic.

In a bowl, combine tahini with freshly squeezed lemon juice. Whisk with a fork or whisk until smooth. The paste will thicken and become grainy, which is normal. It will smooth out when water is added.

Gradually add clean drinking water, one tablespoon at a time, whisking after each addition until the desired consistency is reached.

Add the garlic, olive oil, salt, and pepper, then whisk until smooth and creamy. For a richer flavor, let the sauce rest in the fridge for 30 minutes before serving. You can substitute lemon juice with lime juice or apple cider vinegar. Olive oil can be replaced with sesame oil for a stronger aroma. You may also add cumin or coriander for extra spice.
