Step 1
Prepare all the necessary ingredients. Choose firm, medium-sized sweet potatoes. Use any fresh herbs you like, but don’t forget a few mint leaves to make the tzatziki sauce extra refreshing. Preheat the oven to 375°F (190°C).

Wash the sweet potatoes thoroughly under running water using a brush, then pat them dry with paper towels. Poke them several times on each side with a fork—this allows steam to escape and prevents the skin from bursting.

Rub the sweet potatoes with oil and salt. I use coconut oil, but you can choose any vegetable oil to your taste. Place them on a baking tray lined with parchment paper. Bake in the preheated oven for 50-60 minutes, depending on your oven.

Lay bacon strips on parchment paper and place them in the oven. You can add them 15-20 minutes before the sweet potatoes are done.

While the sweet potatoes are baking, prepare the tzatziki sauce. Wash and grate the cucumber on a fine grater, then squeeze out the excess liquid.

Wash and finely chop the fresh herbs.

In a bowl, mix Greek yogurt, grated cucumber, chopped herbs, pressed garlic, lemon juice, and olive oil.
