Step 1
Use finely ground oats – they cook faster and make the cookies softer. You can substitute apples with bananas, pears, or other fruits if desired.
Step 2
Soak the raisins in hot water, then rinse well, remove any stems, and pat them dry.

Step 3
Wash the apples, peel them, core them, and cut into small pieces.
Step 4
Blend the apples into a purée using a blender, or grate them by hand.
Step 5
In a separate bowl, beat a room temperature egg with a whisk. It’s not necessary to whip it into a fluffy white foam.

Step 6
Add oats, apple purée, and softened raisins to the beaten egg.
Step 7
Mix all the ingredients until smooth. Let the mixture sit for 10–15 minutes so the oats soften.
Step 8
Form small balls of dough, flatten them slightly with your hand, and place them on a baking tray lined with parchment paper or greased. Bake in a preheated oven at 350°F (180°C) for 15–20 minutes. Check for doneness with a toothpick or by breaking a cookie – if the inside is dry, they are ready.

Step 9
Let the sugar-free cookies cool completely on a plate. Serve with tea or a glass of warm milk – they are delicious. Enjoy!
