Smoothies with coconut milk are a great option for people with lactose intolerance. The bright flavor of strawberry pairs beautifully with the sweetness of coconut milk and banana.

 

Smoothies are very simple to make and open to creativity. You can easily swap out ingredients—use different berries or fruits instead of strawberries, or substitute coconut milk with cow’s milk or any plant-based alternative. I personally love this recipe’s combo, but you might find your own perfect match. Experiment!

For those who prefer tangier drinks, you can skip the honey altogether—banana and coconut milk are naturally sweet. Honey can also be replaced with another sweetener like regular sugar, coconut or cane sugar, or even a sugar substitute.

Step 1
You can adjust the amount of honey to taste. Use either frozen or fresh strawberries. If using fresh ones, wash, remove stems, and cut in half for easier blending.

Peel the banana and cut it into small pieces so it blends smoothly.

I use frozen strawberries and defrost them in the microwave (you can use any defrosting method). Once defrosted, the strawberries become very soft and release juice, so there's no need to cut them. Combine all ingredients in a container suitable for an immersion blender.
Step 4
Blend everything until smooth! Before serving, check with a spoon to ensure there are no large pieces of banana or strawberry left.
Step 5
Pour the smoothie into a pretty glass and enjoy! The final drink volume is approximately 14–17 fl oz (400–500 ml).
