Step 1
Chicken offal is one of the cheapest products and can be used to prepare many delicious and healthy meals, such as stewing them with potatoes.
Step 2
Thoroughly wash the chicken gizzards, removing any foreign particles, membranes, and traces of bile. Cut the gizzards into small pieces and rinse again.

Wash, peel, and dice the potatoes into small cubes.

Wash, peel, and cut the carrot into small cubes, thin strips, or grate it.

Peel the onion and cut it into cubes or half-rings.

Heat vegetable oil in a skillet, preferably cast iron or heavy-bottomed. Optionally, use pork fat for a richer flavor. Add the onion and fry until translucent.
Step 7
Add the prepared chicken gizzards to the onion, stir, and cook together for about 10 minutes over medium heat.
Step 8
Add a bay leaf, salt to taste, and a few black peppercorns. Optionally, add other seasonings that pair well with potatoes and gizzards. Pour in a small amount of water and stew the gizzards for another 10 minutes. Remove the bay leaf afterward.

Add the prepared potatoes and carrots to the skillet. Add enough water so that it is level with the contents of the skillet. Cover with a lid and simmer for about 25 minutes over medium heat. After that, remove the lid, stir. The liquid should almost completely evaporate, and the gizzards should be very soft and tender.
Step 10
Turn off the heat and let the dish stand under the lid for about 15 minutes. Serve the chicken gizzards with potatoes, sprinkled with fresh herbs. Enjoy!
