Step 1
Prepare all ingredients. I use pork shoulder, but pork neck works well too. If you don’t want cilantro, you can double the amount of parsley. Choose culinary coconut milk with a higher coconut content for a richer taste.
Step 2
Prepare the pork. If using frozen meat, defrost it properly to avoid dryness. Rinse the pork, pat it dry with paper towels, and trim off excess fat. Cut into medium-sized pieces, slicing against the grain for a more tender result.

Peel and chop the onion into small pieces, then sauté it in one tablespoon of vegetable oil until soft.

Peel and finely chop the ginger and garlic. Rinse the chili pepper and fresh herbs. Remove the stem and seeds from the chili and cut it into small pieces. It’s crucial to wear gloves (or use plastic bags) when handling chili to avoid skin irritation or burns. Coarsely chop the herbs along with the stems.
Step 5
In a blender, combine the ginger, garlic, chili, herbs, spices (salt, turmeric, coriander, cumin), 2 tablespoons of coconut milk, and 2 tablespoons of vegetable oil. Blend until smooth.

Heat a tablespoon of vegetable oil in a pan and sear the pork on all sides. Then, add the sauce, mix well, and cook for another 2-3 minutes.

Pour in the coconut milk and stir well. Once it starts boiling, cover the pan and simmer on low heat for 1 hour. The exact time will depend on your stove and pan.

Add lime juice to the pork, mix, and cook for another 10 minutes.
