Step 1
Prepare all the necessary ingredients. Wash and peel the vegetables. Cut the potatoes into thin strips or cubes, ensuring they are not too large. Grate the carrot. Finely chop the onion.

Heat vegetable oil in a pan and sauté the onion and carrot, stirring, until soft. Pour water into a pot, place it over high heat, and bring to a boil. If desired, you can skip frying and add the carrots and onions directly to the soup in step 6.

You can use store-bought or homemade ground meat for the meatballs. A mix of beef and pork works best for a richer and more nutritious soup. Add an egg, salt, and ground black pepper to the meat and mix well.

Wet your hands with cold water and shape small meatballs.

Once the water in the pot boils, add the meatballs one by one. Cook for about 10 minutes.

Add the sautéed vegetables and potatoes to the soup, stir, and cook for another 10–15 minutes.

Add the vermicelli and bay leaf. Season with salt and pepper to taste. Cook the soup until the potatoes and pasta are soft but not overcooked. Add finely chopped herbs and stir. Turn off the heat and let the soup sit under the lid for a few minutes.
