So homemade, so crumbly, so delicious! Simple cottage cheese cookies are a childhood memory for many. This is how our mothers and grandmothers made them. Made with basic, affordable ingredients, even beginners can handle it. No cookie cutters needed – a glass will do.

Step 1
Use soft, smooth cottage cheese – grainy types will leave lumps in the dough. Fat content doesn’t matter, only the calorie count. Make sure the cottage cheese and butter are both high-quality and natural.

First, melt the butter using any method (I used a microwave). Let it cool slightly.

In a mixing bowl, add the cottage cheese, cooled melted butter, and one egg. Add a pinch of salt to balance the flavor.

Mix everything together with a fork until smooth.

Combine flour with baking powder. Sift 2/3 of it into the cottage cheese mixture first. Mix and assess if more flour is needed.

The dough should be soft; avoid making it too stiff. You might not need all the flour.

Wrap the dough in plastic wrap and refrigerate for 30 minutes.

Roll out the chilled dough into a thin sheet, about 5 mm thick. The dough should be non-sticky, requiring minimal flour during rolling.

Use a glass to cut out circles from the dough.

To shape the cookies: sprinkle sugar on a circle, fold it in half with the sugar inside, dip one side in sugar, fold again with sugar inside, and dip one side in sugar. Repeat with all dough. Gather scraps, re-roll, and repeat.

Line a baking sheet with parchment paper. Place the cookies on it, sugar side up, leaving space between them as they will expand during baking.

Bake in a preheated oven at 200°C (392°F) for about 20 minutes. Baking time may vary depending on your oven. The cookies should turn golden brown.

Remove the baked cookies from the oven, let them cool, and serve.
