Fabulously juicy and full of summer vibes! Simple Berry Pie is quick to prepare – just in time for tea. A generous amount of sugar thickens the berry juice. If you use less sugar, add starch or breadcrumbs to the filling.

Step 1
You can use any kind of berries. I use three types: cranberries, lingonberries, and black currants. If the berries are frozen, let them thaw and drain the excess liquid. Sift the flour ahead of time to aerate it.

To make the dough, pour boiling water and vegetable oil into a small bowl.

Add all the flour at once, along with baking soda and salt. Mix immediately to form a dough.
Step 4
The flour will quickly cook in the hot liquid, and the dough will form into a ball. It should be soft, pliable, and oily. Don’t over-knead it. Remember, flour absorbs moisture differently, so you may need slightly more or less.

For the filling, chop the nuts and mix with half of the sugar.

This dough makes one large pie or two small ones. Roll the dough into a circle on parchment paper.
Step 7
Mix the berries with the remaining sugar. If the berries are very juicy, add a bit of starch.

Spread the nut mixture over the dough, leaving a small border. Then layer the berries on top. Fold the edges over the filling and pinch gently to secure. Sprinkle the crust with a bit of sugar.

Cover the filling with foil to prevent it from leaking during baking. Bake in a preheated oven at 350°F (180°C) for 30–40 minutes.

The pie should be lightly golden. Remove your summer berry pie from the oven and let it cool completely. Enjoy with tea!
