Step 1
You can use milk of any fat content and filtered or bottled water — tap water may affect the taste. You may adjust the ratio of milk to water, or cook the porridge using just milk or just water. Adjust the total liquid amount depending on how thick you like your porridge.

Use a saucepan suitable for cooking porridge. The key to lump-free semolina is not adding the semolina to boiling liquid. Instead, pour it into a cold saucepan first, then add milk and water while stirring with a spoon. Add sugar and salt to taste.

Place the saucepan over low heat — this also helps prevent the porridge from thickening too quickly at the bottom.

Cook the porridge while stirring constantly. This is another trick for a smooth texture. Cooking will only take about 5–7 minutes.

The porridge will gradually thicken and begin to boil. Let it cook for another 1–2 minutes. If it seems too thick, add a bit more milk or water.
