You can make individual bite-sized appetizers on skewers: finely dice the bell pepper and mix it with the cheese. Spread a little cheese on a slice of sausage and roll it up. Secure the roll with a skewer. Repeat for all the rolls.

Step 1
Prepare the necessary ingredients. You can use any sausage for the roll—dry-cured, smoked, or boiled-smoked. I used salami. You can choose any cheese—processed or cream cheese. Cream cheese is firmer and gives the rolls a neater cut, while processed cheese makes the appetizer more tender.

It's best to use pre-sliced sausage or ask the store to slice it with a machine so the pieces are thin and easy to roll. If that's not possible, slice the sausage yourself as thinly and evenly as possible. A key tip: choose a sausage with a larger diameter—bigger slices roll up better and hold their shape more firmly.

Wash and dry the bell peppers. Remove the seeds and stem. Cut the peppers into long strips. For a more colorful appetizer, use peppers of different colors. You can also add other vegetables to the filling, such as cucumbers or tomatoes. However, if using tomatoes, remove the juicy core with seeds to prevent excess moisture from making the rolls too soft.

Cover a cutting board with plastic wrap. Arrange the sausage slices in an overlapping rectangular shape on the wrap.

Spread an even layer of processed cheese over the sausage. Alternatively, you can roll out the cheese between two sheets of plastic wrap into a smooth rectangle. Remove the top layer of wrap, place the sausage slices overlapping on the cheese, cover again with plastic wrap, and flip it so the sausage is on the bottom. Then, spread the bell peppers on top and roll everything into a log.
