Step 1
You can use either yeast or non-yeast puff pastry. Defrost the dough beforehand. Store-bought or homemade puff pastry both work. Preheat the oven to 375°F (190°C).
Step 2
Wash the egg and separate the white from the yolk. Always wash eggs before using, as bacteria can remain on even clean-looking shells.

Step 3
Use any hard or semi-hard cheese — the key is good flavor and no fake dairy fat. Grate the cheese coarsely. Mix the cheese with the slightly beaten egg white. The egg white helps prevent the cheese from leaking during baking.
Step 4
Lightly dust your surface with flour. Roll out the puff pastry into a rectangular sheet. Cut the sheet into squares — the number depends on your desired turnover size. I cut mine into 6 pieces.
Step 5
Classic turnovers are triangular. Imagine a diagonal line on each square. Place half a sausage along the diagonal on one side of the square (I cut longer sausages in half).

Step 6
Add about 1.5 to 2 teaspoons of grated cheese next to the sausage.
Step 7
On the opposite side of the square (the one that will cover the filling), make a few small slits so steam can escape during baking.
Step 8
Fold the cut side over the filling to form a triangle — this is where the name “turnover” comes from. Press the edges firmly using a fork.

Step 9
Repeat with the remaining dough. Place turnovers on a baking sheet lined with parchment paper. Brush the tops with egg yolk.
Step 10
If desired, sprinkle with sesame seeds.
Step 11
Bake in the preheated oven at 375°F (190°C) for 20–25 minutes until golden brown. Keep in mind that oven temperatures and times may vary, so adjust accordingly.

Step 12
Serve the turnovers warm. Enjoy!
