Step 1
Instead of rye bread, you can use white sandwich bread. It's best to buy pre-sliced bread to save time. Even slices look neater on the plate. Slice the bread into pieces about 0.4 inches (1 cm) thick if not pre-sliced.
Step 2
Wash the cucumber, pat it dry, and slice it into thin rounds. If the skin is not tough, damaged, or bitter, there’s no need to peel it. I didn’t peel it.

Heat 1 tablespoon of vegetable oil in a skillet. Add the bread slices and toast on both sides until golden brown. Alternatively, you can toast the bread in a dry skillet or a toaster. Place the toasted bread on a plate.
Step 4
Rub each side of the bread slices with a peeled clove of garlic.

Spread mayonnaise over the bread slices. You can substitute it with sour cream or a sour cream-mayo mix.

Place cucumber slices on top of the mayonnaise layer.

In the skillet, heat the remaining oil on low heat. Carefully crack in the eggs, keeping the yolks intact. Fry until the whites are set but the yolks remain runny. Lightly salt the whites.

Place one fried egg on each sandwich. Serve the hot sandwiches immediately, garnished with fresh herbs. Enjoy!
