Step 1
The fermented milk drink should be fresh and not sour, with any fat content. Choose good-quality cocoa, and it must be natural, not instant drink mix. Remove the ryefermented milk from the fridge in advance to allow it to come to room temperature.

Pour cold boiled water over the gelatin, stir it, and let it bloom for 15 minutes.

Dissolve the gelatin in a water bath or on low heat on the stove, stirring constantly. Be sure to monitor the temperature to prevent overheating. Alternatively, use the microwave with the appropriate setting. Let the gelatin mixture cool slightly before using.

In a small bowl, pour a little ryefermented milk, add the cocoa powder, and mix thoroughly until smooth. It’s easier to dissolve the cocoa lumps in a smaller amount of liquid.

Pour the remaining ryefermented milk into a suitable-sized bowl, add sugar, and stir. The amount of sugar is up to your taste. For those with a sweet tooth, you can add more sugar. This amount will result in a moderately sweet dessert.

Add the dissolved cocoa mixture into the ryefermented milk. Stir well until everything is uniform.

Gradually, while stirring continuously, pour the gelatin mixture into the cocoa ryefermented milk. Be sure to mix actively to evenly distribute the gelatin. It’s important that the ryefermented milk is not cold, as a temperature contrast could cause gelatin strands to form.
Step 8
Pour the soufflé mixture into creamers or suitable molds. Place the dessert in the refrigerator for 2-3 hours to set.
