Step 1
Choose light-colored potatoes — they contain more starch, which helps form a crispy crust. Young potatoes with thin skin are ideal, as there's no need to peel them. You can adjust the spices to your taste. Use refined, odorless oil.
Step 2
Wash the potatoes thoroughly with a brush under running water. Leave the skin on if using young potatoes; peel older ones. Cut each potato lengthwise into 8 wedges — first in half, then quarters, then cut each quarter again in half.

Boil a saucepan of water. Once it boils, add the potato wedges. Cook for 4–5 minutes only — any longer and they may fall apart. A short boil makes them slightly sticky, helping the spices and oil stick, which forms a great crust. After boiling, drain and place the wedges on paper towels to dry well, as moisture prevents oil absorption. Let them cool.
Step 4
In a small bowl, mix salt and your chosen spices. Dried garlic adds great aroma, and paprika and turmeric give nice color. Add the oil and mix.
Step 5
Place the cooled potatoes in a bowl and pour the spiced oil over them. Mix by hand to coat all wedges evenly. Let them sit for 10 minutes. Meanwhile, preheat the oven to 220°C (428°F).

Line a baking sheet with parchment paper. Place the wedges skin-side down ("standing up") on the tray.
Step 7
Bake the rustic potatoes for 20–30 minutes, or until golden and crispy. Timing depends on your oven and the size/type of potatoes. Mine took about 25 minutes — just taste a wedge to check readiness.
Step 8
Oven-baked rustic potato wedges go great with different sauces. Serve hot as a side dish or on their own with a dipping sauce. Enjoy!
