Step 1
First, prepare all the necessary ingredients for the dough. The kefir should be at room temperature, so take it out of the fridge in advance. Cold kefir does not dissolve salt well. The vegetable oil for frying should be refined and odorless.

Sift the flour into a bowl. Add salt and baking soda, then mix. Sifting the flour is important as it aerates it, making the dough light and fluffy when cooked.

Gradually pour in the room-temperature kefir while mixing thoroughly. Depending on the flour quality and the kefir’s moisture content, you may need more or less of these ingredients. Adjust based on the consistency of the batter.

The batter should be thick but still flowable. If it is too runny, add a bit more flour. If too thick, dilute it with kefir.

Now, prepare the filling. Peel and grate the onion using a coarse grater.

Add the grated onion, salt, and pepper to the ground beef. Mix well until the filling is uniform. You can use store-bought minced meat or grind fresh meat in a meat grinder or blender. Besides beef, you can also use lamb, pork, chicken, turkey, or a mix of meats.

Divide the minced meat into 10 equal parts and roll each into a ball. Flatten each ball slightly to form a patty that will sit well in the pan.

Heat vegetable oil in a large frying pan over low heat. Place three meat patties in the pan, keeping some space between them. Fry until lightly golden, then flip to the other side.

Carefully pour a small amount of batter over each meat patty, ensuring it fully covers the meat and spreads slightly around the edges. Cover with a lid and fry until the bottom is golden brown.

Flip the belyashi so that the dough side is now facing down. Cover and fry for another 2–3 minutes. Transfer the finished belyashi to a plate. Repeat with the remaining portions. After each batch, it's best to wipe the pan dry and use fresh oil to prevent burning. Cooking time may vary depending on your stove and personal preferences.
