Step 1
Prepare all the necessary ingredients. You can use kefir of any fat content; I used 3.2%. You can choose any filling you like. I used plum jam.

Heat the kefir and butter until warm. I did this in the microwave using short bursts.

Add sugar and salt, then mix well.
Step 4
Mix the yeast with sifted flour. If you are using non-instant yeast, dissolve it first in 2 tbsp of warm water with a little sugar and let it sit for 10-15 minutes to activate. Fresh yeast (30-40 g) can also be used, but it should be dissolved in the kefir and butter mixture.
Step 5
Gradually add the flour with yeast to the liquid ingredients, mixing well each time. Depending on the flour quality, you may need slightly more or less.

Cover the bowl with a towel or plastic wrap and leave it in a warm place for about 1 hour. The exact time depends on the yeast activity and room temperature.
Step 7
Punch down the risen dough and start shaping the pies. Divide the dough into several parts. Flatten each piece into a small round on a floured surface, place the filling in the center, and seal the edges tightly. Place the pies seam-side down on a parchment-lined baking sheet and let them rest for 10-15 minutes. Preheat the oven to 180°C (356°F).
Step 8
Brush the pies with egg yolk using a silicone brush and bake in the preheated oven for 15-20 minutes. The exact time depends on your oven. Once baked, let them cool and serve. Enjoy your meal!
