Step 1
Use high-quality flour and cold butter straight from the fridge.
Step 2
In a blender, mix the flour, sugar, and cold butter. Blend until fine crumbs form. Set the streusel aside.

Prepare the remaining ingredients. You can use yeast-free or yeast puff pastry (store-bought or homemade). Defrost in the fridge. Use firm cottage cheese (like block-style).

Rinse and pat dry the raisins. Any kind—dark or golden, large or small—will work.

Beat the egg with a fork until smooth. Divide into two unequal parts.

If needed, press the cottage cheese through a sieve. In a bowl, mix it with the larger part of the beaten egg, sugar, and vanilla. Mash with a fork until smooth.

Add raisins and mix again. You can skip them or replace with other dried fruit.

Roll each sheet of pastry into a rectangle. If using a rolled pastry, cut it in half. Make several diagonal slits along the long edges.

Spread half of the cottage cheese mixture in the center. Fold in the short edges. Braid the cut edges over the filling.

Place the pastries on a parchment-lined baking tray, leaving space between them. Brush with the remaining egg.

Sprinkle with streusel. Bake at 350°F (180°C) for 20–30 minutes until golden. For extra browning, turn on broil for a few minutes at the end.
