Advice

To avoid irritation from cutting onions, rinse the onion and knife with cold water. The cutting board will not absorb the unpleasant onion smell if you rub it with a lemon before cutting.

Step 1
Prepare all the ingredients you’ll need for the recipe. Choose fresh pork tenderloin, not frozen, as it will give you the juiciest and most tender shashlik.
Step 2
Rinse the meat and pat it dry with a towel. Cut the pork into small, evenly sized pieces. Place them in a deep bowl suitable for marinating.

Sprinkle the pieces with a prepared shashlik spice mix. Mix everything together.
Step 4
Peel the onion and cut it into thick half-rings. Massage the onion with your hands to release the juice and add it to the pork.
Step 5
Rinse the tomatoes and pat them dry with paper towels. Slice the tomatoes into rings, not too thin. If you plan to skewer the tomatoes with the meat, choose firm ones so the slices hold their shape. Add them to the bowl with the meat.

Add vinegar if desired. Alternatively, you can use 0.5-1 tablespoon of mayonnaise. Vinegar and mayonnaise will soften the pork during marination. Add a pinch of ground black pepper and mix everything gently. Cover the bowl with plastic wrap and refrigerate for at least 4 hours. I usually marinate it overnight and half of the next day.
Step 7
Skewer the marinated pieces onto the shashlik skewers. If you like, alternate pieces of meat with tomatoes. Season the pieces of meat with salt on all sides to taste.

Light the grill. When the coals burn down and are covered with white ash, proceed to the next step. Place the skewers on the grill.

Grill, turning occasionally, until fully cooked. Be careful not to overcook the meat on the coals, as it can become dry and tough. Pork tenderloin cooks quickly. To check if the shashlik is ready, make a cut in one of the pieces. If you see clear juice, it’s time to remove the skewers from the grill.

Serve the delicious pork tenderloin shashlik with fresh salads, vegetables, and various sauces.
