Step 1
Choose a meaty part of the pork without bones, such as shoulder or ham. Use a medium-sized lemon and a similar-sized onion.
Step 2
Peel the onion and rinse it in cold water. Wash the lemon under running water using a brush. One lemon is enough—more might make the meat too sour.

Cut the pork into evenly sized chunks suitable for skewering. Not too large (they won’t cook through), not too small (they’ll dry out).
Step 4
Slice the peeled onion into thin half-rings. To reduce tears, chill the onion and knife in cold water before slicing. Then mash the onion with your hands to release the juice.
Step 5
Place the chopped pork into a plastic, glass, or ceramic bowl. Add the mashed onion. Squeeze lemon juice directly over the meat. Add spices to taste—either a BBQ mix or just ground black or red pepper.

Mix everything well. Cover with a lid or plastic wrap. Let marinate for several hours. If possible, marinate overnight in the fridge. If short on time, leave at room temperature for 3–5 hours. Mix a few times during marinating. Add salt an hour before cooking.

Skewer the marinated meat tightly onto skewers and grill over hot coals, rotating to cook evenly on all sides.

Keep turning the skewers to avoid burning. Serve hot with fresh vegetables, salad, or your favorite sauce. Enjoy your meal!
