Step 1
You can use puff pastry with yeast like I did, or plain puff pastry or just yeast dough. I used store-bought frozen dough in square sheets. I needed one sheet. Thaw the dough in advance on the lower shelf of the refrigerator.
Step 2
Pour the poppy seeds into a bowl, cover with boiling water, and let sit for 15 minutes.

Step 3
Drain the poppy seeds using a fine sieve. Transfer them back into the bowl, cover with boiling water again for another 15 minutes, then drain again. This process removes dust, bitterness, and softens the poppy seeds, enhancing their flavor and aroma. Let the poppy seeds dry.
Step 4
In a blender bowl, combine the poppy seeds, sugar, and softened butter.
Step 5
Blend the mixture for 1 minute.

Step 6
Roll the dough out into a smooth rectangular sheet.
Step 7
Spread the filling evenly over the surface of the dough, leaving a small border around the edges.
Step 8
Roll the dough tightly into a log.

Step 9
Use a sharp knife to cut the roll into 8 equal pieces.
Step 10
Place the pieces seam-side down on a baking sheet lined with parchment paper. I used high-quality silicone parchment, so I didn’t grease it. The buns came off easily without sticking.
Step 11
Brush the rolls with a beaten egg using a pastry brush. Bake in a preheated oven at 300°F (150°C) for about 35 minutes, then increase the temperature to 355°F (180°C) and bake another 10 minutes until golden brown.

Step 12
Transfer the beautiful homemade poppy seed rolls to a serving plate and serve immediately. Enjoy!
