Step 1
Prepare the ingredients for the dough. Melt butter slowly or soften slightly in the microwave.

Measure out ingredients for the starter. Warm the milk slightly (about 95–100°F).

In a bowl, mix warm milk with sugar and yeast.

Sift in flour and whisk until smooth. Cover with a towel and let rise in a warm place for ~20 minutes.

The starter will rise and form bubbles.

In a large bowl, beat the egg with salt, sugar, and vanilla sugar until smooth.

Add the risen starter and mix.

Add melted, cooled butter and mix again.

Sift in about ¾ of the flour and stir with a spoon. Don’t add all the flour at once.

Add the remaining flour gradually, mixing. Focus on dough texture, not the exact amount.

Knead a soft, non-sticky dough. Cover and let rise for 1–1.5 hours in a warm place.

For the filling, let the butter soften. Adjust sugar amount to your taste.

The dough should double or triple in size.

Gently knead the dough and place on a floured surface. Divide into 3 equal parts.

Roll one part into a circle (about 9 inches in diameter). You can do this directly on parchment paper.

Spread softened butter over the surface, leaving the edges clean.

Sprinkle with sugar, then poppy seeds.

Roll out and place the second layer of dough on top.

Repeat butter, sugar, and poppy seed layer on the second piece.

Cut the dough into 4 equal parts, not all the way to the center.

Divide each quarter in half.

Then divide each segment in half again, forming 16 segments.

Twist two neighboring segments twice in opposite directions and pinch ends together.

Repeat with all segments to form a flower shape.

Cover the shaped pie lightly and let it rest for 15–20 minutes.

Brush the top with a mix of egg yolk and milk.
