Step 1
You can use sugar instead of honey. For dried fruits, dried apricots or prunes are also suitable.

Steam the raisins. How to steam raisins? Rinse them thoroughly, pour hot water over them, and let sit for 10–15 minutes. This will soften them and make the filling juicier. Drain and pat dry with paper towels. If using other dried fruits, do the same.

Pour the poppy seeds into a small saucepan. Add water at a 1:2 ratio (1 part poppy seeds, 2 parts water). Bring to a boil, then simmer over medium heat for 10–15 minutes, stirring occasionally.
Step 4
Turn off the heat and let the poppy seeds sit, covered, for another 10–15 minutes to fully soften.
Step 5
Drain the poppy seeds using cheesecloth folded several times.

Transfer the poppy seeds and dried raisins to a suitably sized bowl.
Step 7
To make the filling smoother and more uniform, grind the poppy seeds and raisins. Use an immersion blender, food processor, or mortar and pestle—whatever works best for you. I used an immersion blender.
Step 8
Add honey (or sugar) to the ground mixture and mix thoroughly. The filling will become thicker. Adjust the sweetness to your taste. If you like it sweeter, add more honey—but keep in mind the raisins are already sweet. For added flavor, you can include orange or lemon zest, which gives a citrusy aroma.

The poppy seed filling is ready. This amount is enough for a roll about 13–14 inches (34 cm) long. It can also be used for buns or pies. Enjoy your baking!
