Step 1
You can use pre-cut fillets or cut a whole fish yourself. Pollock is usually sold frozen, so thaw it ahead of time by moving it from the freezer to the fridge's lower shelf. I used pre-shredded cheese. You can substitute sour cream with mayonnaise if preferred.
Step 2
Wash and dry the tomatoes. Cut them into thin rings. If the tomatoes are large, cut them into half-rings—each piece should match the size of the fillet. Grate the cheese if it's not pre-shredded. Cut the fillet into portion-sized pieces (about palm-size).

Take a suitable baking dish. Drizzle a bit of vegetable oil on the bottom (you can spread it with one piece of fish). Place the fish pieces tightly in the dish—they will shrink during baking. Drizzle with lemon juice. Season with salt, pepper, and fish spices if desired.

Spread sour cream or mayonnaise over the fillets. (Note: mayonnaise increases the dish’s calorie content.) Arrange tomato slices on top of each fish piece—this will make serving easier. Sprinkle everything generously with grated cheese.
Step 5
Bake in a preheated oven at 350°F (180°C) for about 30 minutes. The exact time may vary depending on your oven. The cheese should melt completely. Once done, remove from the oven and serve hot.
