Step 1
Prepare the ingredients. Choose smooth, evenly shaped potatoes for easier grating. I used large potatoes, so I took 4 pieces.

Peel the potatoes and rinse them well under cold water to remove surface starch. If not rinsed, the potatoes may turn dark. Grate the potatoes using a coarse grater.

Transfer the grated potatoes to a bowl of clean cold water and let them sit for 5 minutes to remove excess starch. You can also rinse them multiple times under running water. At first, the water will be cloudy due to the starch, but it will gradually become clear.

Place the grated potatoes on paper towels and pat them dry. The potato shreds will become firmer once dried. You can additionally blot them with paper towels. Removing all moisture is essential, as water in hot oil may cause splattering. Don't worry—the potatoes will not darken and will retain their golden color.

Peel the onion and grate it using a fine grater.

In a bowl, combine the grated potatoes, onion, flour, salt, and pepper. Mix everything thoroughly.

Heat vegetable oil in a frying pan over medium heat. Place about 2 tablespoons of the potato mixture per hash brown into the pan and form small round patties. Fry for 3-4 minutes per side until golden brown.

Transfer the cooked hash browns to paper towels to remove excess oil.
