Soft, fluffy, and fragrant! This Oven-Baked Raisin Cake is made from ingredients you probably already have. The batter is similar to a sponge cake but with a softer sour cream flavor. You can swap raisins for other dried fruits or fresh berries. A true family favorite!

Step 1
Use sour cream with 15–20% fat. Note that consistency can vary by brand, so flour amount may need adjusting. Use high-grade flour and large eggs. Make sure sour cream and eggs are at room temperature – take them out ahead of time.
Step 2
In a bowl, beat eggs with sugar and vanilla sugar until fluffy. The airiness of your cake depends on this step. Do not overbeat until stiff – you’ll lose the air bubbles that help the cake rise. Even baking powder won't help if the batter is too dense.

Add the sour cream and mix on low speed.
Step 4
Sift flour with baking powder and a pinch of salt. Add gradually, mixing at low speed or with a spatula. Flour quantity may vary.
Step 5
Rinse and dry the raisins. Mix most of them into the batter. You can use any kind of raisins – dark, golden, large, or small.

Pour the batter into a greased, parchment-lined baking form (7–8 inch / 18–20 cm diameter). Sprinkle the remaining raisins on top. Bake at 350°F (180°C) for 40–50 minutes, until done.
Step 7
Transfer the finished cake to a serving plate, sprinkle lightly with powdered sugar, and serve. Enjoy!
