Advice

Many spices and seasonings complement pasta, enhancing its flavor and making it more aromatic. Here are some great options: Oregano – commonly used in pasta sauces, adding aroma and slight bitterness. Thyme – gives pasta and sauces a delicate aroma and flavor, perfect for tomato-based dishes. Rosemary – should be used sparingly to create an earthy and fragrant background. Parsley – fresh or dried, adds a green, fresh aroma and pairs well with garlic and lemon. Red pepper (chili) – for those who love spice, it adds a kick to the dish. Black pepper – a classic seasoning that enhances the overall flavor. Nutmeg – adds a touch of sophistication, especially in creamy sauces. Fennel – has a slightly sweet, anise-like flavor, ideal for seafood pasta. Sage – pairs particularly well with butter, cream, and cheese-based dishes.

Step 1
Prepare the ingredients. Choose short pasta like elbows, penne, or spirals. Pay attention to quality—opt for pasta made from durum wheat. Instead of black pepper, you can use any preferred spices; I used dried basil.
Step 2
Preheat the oven to 200°C (390°F). Use a suitable baking dish. I used a 23×12 cm (9×5 inch) ceramic dish. Pour the dry pasta into the dish, drizzle with vegetable oil, and mix well.

Step 3
Press the garlic through a garlic press and add it to the pasta. Sprinkle with your favorite seasonings; I used dried basil.
Step 4
Mix tomato paste with water and stir until fully dissolved. Add salt and black pepper to the mixture.
Step 5
Pour the tomato mixture over the pasta.

Step 6
Grate the cheese using a coarse grater and sprinkle it over the pasta.
Step 7
Cover the dish with foil, folded in two layers, and carefully seal the edges.
Step 8
Bake the pasta in the oven for 35–45 minutes. The exact time depends on your oven and the type of pasta. Check for doneness by tasting; the pasta should be soft.
