Step 1
For these sandwiches, it’s easiest to use pre-sliced white bread or baguette. Choose a cheese that grates easily and melts well — any type you like.
Step 2
Preheat the oven to 350°F (180°C). Spread the bread slices on a baking tray and place in the oven to lightly toast. You can flip them halfway for even browning. This takes about 7–10 minutes, depending on your oven.

While the bread toasts, rinse the tomatoes under running water. Cut each in half, remove the stem, and dice them into small cubes.
Step 4
Remove the tray from the oven. Rub each slice of bread with a garlic clove, then spread with a thin layer of mayonnaise. Top with diced tomatoes. Season with salt and spices to your taste.
Step 5
Generously sprinkle each sandwich with grated cheese. Return the tray to the oven for another 7–10 minutes until the cheese melts and the tomatoes soften.
