Oat Kissel from Whole Oats

A gentle way to care for your family. Oat kissel from whole oats is an excellent vitamin-rich drink for boosting health. This traditional drink is now undeservedly forgotten, though it’s far more beneficial than store-bought versions.

Step 1
For cooking, it’s best to use neutral-tasting filtered or bottled water. You can also cook this kissel with milk.
Step 2
Sort through the oats and rinse thoroughly. Pour clean water over the oats and let them soak overnight. Soaked grains release their gluten well. If you’re short on time, soak for at least 2–3 hours.

Drain the water, spread the grains on a towel, and dry them completely in the sun or in the oven at 105–120°F (40–50°C). This step is optional, especially if you plan to grind the oats in a meat grinder.
Step 4
Grind the oats using a meat grinder or a blender.
Step 5
Transfer the ground oats to a saucepan, pour in 1 liter (about 4¼ cups) of clean drinking water, and place over medium heat. Bring to a boil, then cook for about 3 minutes, stirring continuously. Remove from heat and let sit for 20–30 minutes.

Strain the kissel using a towel or cheesecloth folded in four layers to separate the pulp.
Step 7
As it cools, the kissel will thicken.
Step 8
Serve the finished oat kissel warm or chilled. Pour into glasses and enjoy. Bon appétit!
