Step 1
Prepare the ingredients. This recipe works not only for mussels but also for other seafood like squid, octopus, or shrimp. You can use store-bought or homemade Tom Yum sauce.

Defrost the mussels. Thaw them in the fridge, drain excess water, rinse, and pat dry.

Chop the green onions. Use the white (light green) part for frying and the dark green part for garnishing.

Prepare the aromatics. Finely chop the garlic. Wash, dry, and roughly chop the cilantro. You can substitute or mix it with other herbs like dill, parsley, mint, spinach, or wild garlic.

Make the sauce. Mix coconut milk with Tom Yum sauce until smooth. The sauce is spicy and sour, so adjust seasoning as needed. I didn’t add extra pepper as the sauce was spicy enough.

Sauté the aromatics. Heat vegetable oil in a pan over low heat. Add garlic and the white part of the onion. Stir-fry until fragrant but don’t let the garlic burn.

Add the sauce. Pour in the coconut milk mixture and stir. Bring it to a boil.

Cook the mussels. Add them to the sauce and simmer on low heat for about 2 minutes, stirring occasionally.

Season and garnish. Add salt and pepper to taste. Sprinkle with cilantro and the remaining green onion. Turn off the heat and let the mussels sit for 2-3 minutes to absorb the flavors.
