Step 1
You can use any kind of meat; here, we’ll use pork. Choose boneless cuts with minimal fat. Wash and peel the potatoes, then rinse under cold water.

Rinse the meat and pat it dry with paper towels to remove excess moisture. Cut the pork into small pieces across the grain to keep it tender.

Peel and wash the onion and carrot. Chop the onion finely, and either grate the carrot or slice it into rounds or sticks. Add both to the bowl with the meat.

Cut the potatoes into small cubes or sticks. Drizzle a bit of vegetable oil over them. Season with salt, black pepper, and herbs (like Italian seasoning).

Mix everything thoroughly so the spices and oil are evenly distributed over the meat and vegetables.

Divide the mixture evenly between clay pots. Since everything is lightly oiled, the ingredients won’t stick together or to the pot walls. Cover each pot with a lid and microwave on medium-high (about 70–80% power) for 10 minutes.
Step 7
After 10 minutes, remove the pots, stir the contents, and return to the microwave for another 10 minutes. The meat and veggies will release their own juices to cook in.
Step 8
