Step 1
In addition to the listed spices, feel free to use your favorites like dried garlic, paprika, curry, etc. You can also use beef, chicken, or turkey instead of pork. Keep in mind the cooking time and calorie content will vary.
Step 2
Rinse the pork and pat it dry thoroughly. If you have a whole piece of meat, slice it into 1/2 inch (about 1 cm) thick portions. I used pre-sliced pork loin, but you can also use pork neck or other lean cuts.

Tenderize the pork slices on both sides with a meat mallet. Sprinkle the meat with spices.
Step 4
Wash and dry the tomatoes, then slice them into rounds. Choose firm and juicy tomatoes – soft ones will fall apart and affect the appearance of the dish.

Wash the mushrooms and cut them into slices. Choose fresh, medium-sized mushrooms that are snow-white without spots or any musty smell. They should not be slimy to the touch. Rinse them thoroughly under running warm or cold water and cut off any damaged parts.

Grate the cheese on a coarse grater. Use any tasty cheese that melts well and contains no artificial additives. I used regular cheese, but you can substitute with mozzarella, suluguni, or another well-melting cheese.
Step 7
Grease a baking dish with oil and place the pork cutlets in a single layer. Top with tomato slices and lightly salt them.
Step 8
Add mushroom slices on top of the tomatoes. Drizzle a thin layer of mayonnaise over the top.

Sprinkle everything generously with grated cheese, and drizzle a bit more mayonnaise. Bake the Merchant-Style Pork in a preheated oven at 390°F (200°C) for 20–30 minutes or until golden brown. The exact baking time depends on the thickness of your pork and your oven’s characteristics. If the cheese is browning too quickly and the meat is still undercooked, cover the dish with foil.

Transfer the Merchant-Style Pork to a plate, garnish with fresh herbs, and serve with your favorite side dish. Enjoy!
