Step 1
You can use any meat – chicken, veal, lamb, or pork as I did. Peel the potatoes and rinse them under running water to remove dirt.
Step 2
Cut the peeled potatoes into any shape you like. I prefer cubes. Place the potatoes into a deep bowl.

Rinse the meat under running water, pat dry, and cut into pieces roughly the same size as the potatoes. Add to the bowl with the potatoes. Choose meat with minimal fat.
Step 4
Peel and wash the onion and carrot. Slice the onion into half-rings. Cut the carrot into rounds or sticks. Rinse the cherry tomatoes and cut them into 2–4 parts. Add the onion, carrot, and tomatoes to the bowl.
Step 5
Drizzle all ingredients with vegetable oil. Add salt and spices. Mix everything well. Use aromatic spices like paprika, dried basil or oregano, and dried garlic.

Spread all ingredients on a baking sheet and place into a preheated oven at 350°F (180°C) for 45–50 minutes. You may lightly cover the top with foil during baking to prevent the vegetables from burning. The baking time is approximate – monitor based on your oven's performance.
Step 7
Remove the cooked pork and vegetables from the oven. The potatoes and meat should be tender, and the vegetables nicely roasted. Serve hot, dividing the meat and potatoes onto plates. Enjoy your meal!
