Before marinating, you can remove the skin from the salmon if desired. I usually marinate the fish with the skin on and remove it just before serving.

Step 1
You can use any type of red fish for this recipe. If your fish is frozen, remove it from the freezer and let it thaw completely at room temperature. Scale, gut, and rinse the fish. Pat dry with paper towels. Cut the salmon into fillets.

Remove the bones. Using tweezers makes this process easier.

In a deep bowl, mix salt, sugar, and ground coriander. You can slightly reduce the amount of sugar to taste. In a separate small bowl, mix olive oil, soy sauce, and the juice of half a lemon.
Step 4
Rub the salmon fillets thoroughly with the salt, sugar, and coriander mixture on all sides.
Step 5
Place the fish in a bowl or container that fits its size.

Apply the marinade to each piece on all sides. I used a silicone brush for convenience. At this stage, you can sprinkle finely chopped dill on the fish, but I usually add herbs to the finished dish. Cover the bowl with plastic wrap and refrigerate for 24 hours. Turn the fillets 2-3 times during marination for even curing.
Step 7
Slice the homemade marinated salmon into thin pieces. If desired, drizzle with lime or lemon juice before serving. Serve marinated salmon in soy sauce as a standalone dish, paired with vegetables, potatoes, or other sides.

Alternatively, use it as a topping for crispbread, baguette, and other appetizers.
