Step 1
You can use fresh or frozen beans, and with frozen beans, there's no need to thaw them. The spice mix can be anything you like; I used khmeli-suneli and ground coriander.

Since this dish cooks quickly, prepare all the vegetables right away. If you have fresh green beans, cut them into pieces about 5 cm long. Peel and chop the onion into small cubes.

Peel the tomatoes. To do this, make an "X" cut on top with a sharp knife, then immerse them in boiling water for 1-2 minutes. Remove and place them in cold water for a moment. The skin will easily come off due to the temperature change.

Chop the peeled tomatoes into cubes.
Step 5
Wash the bell pepper, cut out the seeds and core, then slice the flesh into thin strips. Slice the chili pepper into thin rings. Adjust the amount of chili to your taste.

Wash, dry, and finely chop the herbs. I used young cilantro, but parsley or basil will also work well.
Step 7
Crush the walnuts in a mortar or grind them in a blender until they are finely crumbled.
Step 8
Place a saucepan with water on the stove to cook the beans. At the same time, heat a frying pan and add vegetable oil. Add the onion to the frying pan. Fry it, stirring, for a few minutes until softened. In the boiling water, add salt, then add the beans. Cook them on low heat for 8-10 minutes.

Next, add the tomatoes to the onions. Fry the vegetables for about 5 more minutes, then add the sliced pepper. Fry everything together for another few minutes. By now, the beans will be ready, so drain them in a colander. Into the frying pan, add salt, spices, crushed garlic, and herbs. Mix everything well.
Step 10
Add the beans to the vegetables, pour about 100ml of hot water into the pan. Reduce the heat, cover the pan, and simmer the beans for another 5 minutes. You can adjust the thickness of the lobio by varying the amount of water.

After 5 minutes, add the walnuts, mix, turn off the heat, cover the pan, and let the lobio sit. Then serve it hot or cold.
