Step 1
Prepare the ingredients. The kefir should be at room temperature, so take it out of the fridge in advance. Use high-quality flour. You can substitute dry yeast with fresh yeast at a ratio of 1:3, meaning you will need about 30 g of fresh yeast. The dough can be made with milk instead of kefir, but in that case, you may need more flour.
Step 2
Wash the potatoes thoroughly, scrub them with a brush, and boil them in their skins for about 25 minutes until fully cooked. Let them cool, peel them, transfer them to a large bowl, and mash them into a purée.

In a small bowl, mix slightly warm kefir, egg, sugar, and salt. Stir until smooth. Pour the egg-kefir mixture into the mashed potatoes and mix with a spatula until combined.

Gradually sift the flour and dry yeast into the mashed potatoes and mix with a spatula. Check the instructions on your yeast package—this recipe uses yeast that can be mixed directly with flour. Knead a soft, homogeneous dough. You may need more or less flour depending on the consistency.

Add vegetable oil and dried herbs to the dough and knead until smooth. If the dough feels too greasy and does not absorb the oil, sprinkle a little more flour. The potato dough will be quite sticky, but do not add too much flour while kneading, as this will make the pies dense and tough. Instead, dust the work surface with flour when shaping.

Form the dough into a ball, place it in a bowl greased with vegetable oil, cover with plastic wrap, and leave in a warm place for 40–60 minutes to rise. I place it in a slightly warm (turned off) oven—this helps the dough rise well.

Divide the risen dough into 10–12 equal pieces. Roll each piece into a ball, dust it with flour, and shape it into thick, round patties.

Cover the patties with plastic wrap and let them rest for 15 minutes.

Heat 200 ml of vegetable oil in a frying pan over medium-high heat. To check if the oil is ready for frying, dip a wooden skewer into it—if bubbles form around the skewer, the oil is hot enough. If it bubbles excessively, the oil is too hot. Fry the pies on both sides until golden brown.

Place the cooked pies on paper towels to absorb excess oil. Transfer the lazy fried pies with potatoes to a plate and serve hot. Enjoy your meal!
