Step 1
Prepare all the ingredients from the list. It’s best to use young cabbage with tender leaves. Take the kefir out of the fridge in advance so it reaches room temperature.

First, prepare the filling. Peel the onion and carrot, rinse, and pat dry. Chop the onion into small cubes and grate the carrot using a fine grater. Heat a small amount of vegetable oil in a pan and sauté the onion and carrot until the onion becomes translucent. Stir occasionally.

Shred the cabbage into thin strips (a vegetable slicer works well for this). Add the cabbage to the pan, season with salt and your favorite spices. This time, I used a bit of ground sweet paprika and black pepper.

Fry over medium heat for about 15-20 minutes until the cabbage softens. Remove from heat and let the vegetables cool.

Prepare the batter. Pour kefir into a deep bowl and add baking soda. Stir and let it sit for 3-5 minutes. Crack in the egg and add salt to taste. Mix well.

Gradually add flour while stirring with a whisk. You may need a little more or less flour than indicated in the recipe. The batter should be thick and sticky, similar to pancake batter.

Add the cooled cabbage filling to the bowl.

Mix until evenly combined.

Heat vegetable oil in a pan. Using a tablespoon, drop portions of the batter into the pan, shaping round or oval pies. Fry over medium heat until golden brown.

Flip the patties and fry until fully cooked. Place them on a napkin to absorb excess oil.
