Step 1
Prepare all necessary ingredients. The pork is not cooked, so choose extremely fresh meat.
Step 2
Rinse the pork and pat it dry with paper towels. Trim off any tendons or excess fat. Slice the pork into thin strips against the grain. Slightly freezing the pork beforehand makes slicing easier.

Place the meat in a bowl, add 3 tablespoons of vinegar essence (not regular vinegar), 1 tablespoon of sugar, and ½ tablespoon of salt (adjust to taste). Mix thoroughly and let it marinate for 2–3 hours.

Peel the carrot and shred it into thin strips using a Korean-style grater. If you don’t have one, use a coarse grater.

To the carrots, add 1 tablespoon vinegar essence, 1 tablespoon sugar, and ½ tablespoon salt (adjust to taste). Mix well and let sit until the carrots release juice.

After 2–3 hours, drain the marinade from the pork.

Add the marinated carrots to the pork.

Slice the onion into half-rings (can use a Korean-style vegetable slicer if available).

In a hot pan, sauté the onion until it becomes translucent.

Pour the hot oil with the sautéed onions over the meat and carrots. Add minced garlic and your preferred spices (like ground coriander, red pepper flakes). Mix thoroughly, cover, and refrigerate for 2–3 hours.
