Step 1
You can use any mushrooms, but champignons are easiest. Use 10% or 20% fat cream. Choose any hard cheese you like, as long as it melts well.

Peel and finely dice the onion.

Rinse the mushrooms gently under running water without soaking them – they absorb water like a sponge and become bland. Pat them dry with paper towels.
Step 4
Slice the mushrooms to medium thickness. For large mushrooms, cut the slices in half. Don’t slice too thinly—they shrink significantly during frying.

Heat a skillet over medium heat, add some vegetable oil. Add the onions and sauté for a few minutes, stirring, until translucent.

Add the mushrooms to the onions. Season with salt and pepper, stir. Mushrooms will release liquid. Cook over low heat for about 10 minutes, stirring, until the liquid evaporates.

Meanwhile, prepare the béchamel sauce. In a saucepan with a thick bottom, melt the butter. Add flour and stir constantly with a whisk for one minute.

Slowly pour in the cream while whisking until smooth. Add salt and nutmeg, stir, then cook until the first bubbles appear. Adjust the thickness with more cream if needed—the sauce should not be too thick.

Take small baking molds for julien. Fill them with the sautéed mushrooms. This recipe makes about 2–3 small molds.

Pour the béchamel sauce over the mushrooms.

Grate the cheese on a coarse grater. You can use any cheese—hard, semi-hard, or soft like mozzarella. The key is quality and good melting properties.

Sprinkle the cheese on top of each portion. Place the molds on a baking tray for easier handling.

Bake the julien in a preheated oven at 180°C (356°F) for 20–25 minutes. Watch the cheese—it should turn golden. Remove from the oven and let it cool slightly.

Serve the julien (mushrooms, cheese, cream) warm. Optionally, garnish with a fried mushroom slice and some herbs. Enjoy!
