Homemade Turkey Dumplings

Turkey dumplings turned out quite good, but I prefer them with pork, beef, or a mix of both—maybe just because it's more familiar. After tasting them, I realized something was missing—dill! It makes the dumplings much tastier. I also think these dumplings would be great in broth, as that’s where they truly belong!

Step 1
Prepare the ingredients needed for the dough. We will start with it so that while the dough is resting under the plastic wrap, we can work on the filling for the dumplings. Keep in mind that different types of flour absorb water differently (I used premium-grade flour). This means you may need more or less flour or water, so focus on the dough’s consistency.
Step 2
Sift the flour into a deep bowl, add salt, and mix the dry ingredients. Make a well in the center of the flour and gradually pour in boiling water, stirring with a spoon. Then, continue kneading the dough by hand. Once the dough comes together into a ball, transfer it to a work surface and knead for another 7 minutes. Place the dough back in the bowl, cover it with plastic wrap, and let it rest for 30 minutes.

Now, prepare the filling for the dumplings. Wash the turkey and pat it dry with paper towels.

Cut the turkey into chunks—large pieces are fine as long as they fit into the meat grinder.
Step 5
Peel the onion and cut it into medium-sized pieces. Grind both the turkey and onion in a meat grinder. Add salt and black pepper to the minced meat. If you want juicier dumplings, add a tablespoon of water. Mix the filling well until smooth.

Now, return to the dough. Divide it into several parts. Take one portion to work with and keep the rest covered with plastic wrap to prevent drying. Roll the dough out thinly using a rolling pin. Use a glass or another round cutter to cut out circles. Place a portion of turkey filling in the center of each circle.
Step 7
Fold the dumplings by moistening the edges with water to help seal them. Fold the circle in half, pinch the edges tightly, then join the two ends together and secure them. Repeat for all dumplings.
Step 8
You can cook the dumplings immediately. To do this, bring water to a boil, salt it, add a bay leaf, and drop in the dumplings. Once they float to the surface, cook for another 3-6 minutes, depending on their size. Alternatively, freeze the dumplings and cook them as needed. Store them in a regular plastic bag.
