Step 1
This recipe makes four pies. You can halve the ingredients or freeze some dough – it stores well. The key to great puff pastry is high-quality butter. Let it soften at room temperature.

In a cup of warm water (about 86°F / 30°C), dissolve sugar and salt.

Pour into a bowl, crack in an egg, and mix well. Add 1 tablespoon of 9% vinegar. Stir again.

Gradually add sifted flour – sifting adds air and results in a more tender pie. Knead the dough.

The dough should be soft, elastic, and not sticky. Shape into a ball.

Divide the softened butter into four equal parts.

On a floured surface, roll out each dough piece into a thin rectangle about 1/8 inch (3 mm) thick.

Wrap the dough around a greased rolling pin, slice lengthwise, then remove the pin.

Fold the dough again across the width. Repeat with all pieces. Wrap in plastic wrap and refrigerate for a few hours.

Meanwhile, prepare the filling. Use fresh, high-quality cottage cheese. Split one egg – half goes into the filling, the other for brushing the pie. Mix cottage cheese with sugar, a pinch of salt, the egg half, and a bit of vanilla. Preheat the oven to 392°F (200°C).

Prepare the streusel topping: Mix chopped butter, sugar, and flour until crumbly. Refrigerate until use.

Roll out the chilled dough into a thin rectangle.
