Light, fluffy, and perfect for your favorite snack! Homemade burger buns are made from regular yeast dough. Traditionally topped with sesame seeds, they turn out soft and airy. A tastier and healthier alternative to store-bought ones.

Step 1
Slightly warm the milk and water. Other ingredients should be at room temperature. Use neutral vegetable oil. Melt the butter in a water bath or microwave.

In a small bowl, combine the yeast, 1 tsp of sugar, and the warm water. Mix well and let it activate for 10–15 minutes. A foamy cap should appear — that means the yeast is good. You can also use fresh yeast instead of dry.

In a large bowl, beat the egg with sugar and salt until smooth.

Add the warm milk to the egg mixture and stir.

Add the activated yeast and stir again.

Pour in the melted (not hot) butter and mix.

Sift flour into the mixture. Sifting is important as it enriches the flour with oxygen, helping the dough rise and bake light and airy. Add about 2/3 of the total amount and mix with a spoon.

Gradually add the remaining flour, mixing with your hands. Focus on the dough texture rather than exact measurements. It should be smooth, pliable, and barely sticky.

Cover the dough with a light towel and let it rise in a warm place for 70–90 minutes.

When the dough has increased 2–2.5 times and bubbles appear on the surface, it’s ready to shape.
Step 11
Gently knead the dough, place it on a floured surface, and divide it into pieces weighing 90–110 grams, depending on the desired bun size. I made smaller buns – 80 grams each.

Roll each piece into a ball. Cover and let them rest for 7 minutes.
Step 13
Roll the balls again to smooth them out, and place them on a parchment-lined baking tray. Leave enough space between them as they will rise a lot. I had to space them out more later to avoid sticking. Cover with a towel and let rest for another 15–20 minutes.

Slightly flatten each dough ball after proofing to ensure a flat top for the buns.

Mix egg yolk with milk.

Brush the buns with the egg mixture.

Generously sprinkle sesame seeds on top.

Bake in a preheated oven at 350°F (180°C) for 25–30 minutes until golden brown. Adjust time and settings based on your oven.

Cool the finished buns and use them for your burgers. Enjoy!
