Step 1
Measure the ingredients for the dough. Use fresh, low-moisture cottage cheese (curd), 2–5% fat. If the curd is grainy, blend it for a smoother dough. You can use one type of flour—rice or whole wheat—or substitute with corn or oat flour.
Step 2
For the filling, use any cheese (hard, semi-hard, or soft), as long as it’s flavorful, good quality, and melts well. Wash the eggs thoroughly before use to remove potential bacteria. Rinse and dry the herbs (used for serving). Preheat your oven to 350°F (180°C).

In a bowl, combine the cottage cheese, one egg, and a pinch of salt. Mix until smooth.

In a separate bowl, combine the two types of flour and baking powder. Sift them into the cheese mixture and stir.

Knead a soft, slightly sticky curd-based dough.

Divide the dough into two equal portions.

Roll each piece into an oval flatbread and shape into a boat with raised edges. You can do this directly on parchment paper.

Grate the cheese using a coarse grater.

Sprinkle the grated cheese inside each dough boat, saving a little for topping.

Bake in the preheated oven at 350°F (180°C) for about 20 minutes, until the dough is cooked through and the cheese starts to brown. Adjust the baking time depending on your oven.

Carefully crack one egg into the center of each boat.

Return to the oven for another 3–5 minutes, until the egg white sets but the yolk remains runny.
